- 1/4 cup extra-virgin olive oil
1 can (750 ml) whole San Marzano tomatoes, chopped
Coarse salt to taste
Basil leaves to garnish, optional
Heat olive oil in medium pot over medium high heat; add tomatoes and reduce for 9 minutes. Add salt and set aside. If the sauce is too thick reduce a little longer over high heat, but watch it to ensure it doesn't get dry.
Please note: always buy whole canned tomatoes with nothing added. Then chop or squeeze through your hands as you add them to the pot. Do not buy diced tomatoes, they don't break down as well as a whole canned tomato.
It is fine to simmer sauce for longer periods over lower heat but if you use the best ingredients, this sauce is perfect for pastas, pizza, or to dip with a good baguette.
