Soy, honey and ginger are a beautiful combination that take this chicken breast to another level. Easy to prepare, this dinner is a winner!


Ingredients

4 chicken breasts, skin-on

Few sprigs lemon thyme

2 tablespoons soy sauce

1/2 cup honey

2 tablespoons ginger, finely chopped

1 teaspoon red chili flakes

3 tablespoons extra-virgin olive oil

1 tablespoon brown sugar

Sea salt and cracked black pepper

Sweet potato wedges

4 sweet potatoes, cut into wedges

2 tablespoons extra-virgin olive oil

1 teaspoon red chili flakes

Sea salt and cracked black pepper


Preparation

Preheat oven to 350°F. In a small bowl, combine the soy, honey, ginger, red chili flakes, olive oil, brown sugar, sea salt and pepper. Seat aside.

To make sweet potato wedges, toss sweet potatoes, olive oil, red chili flakes, sea salt and cracked black pepper in a large bowl. Spread in an even layer on parchment-lined baking sheet and roast in oven 45 minutes or until soft and golden.

Place chicken breasts on parchment-lined baking dish and brush with soy mixture. Scatter thyme over top. Roast 45-50 minutes or until caramelized and cooked through. Serves 4.
