  • 10 Yukon Gold potatoes, skins on 

  • 1/2 cup 35% cream

  • 1/2 cup butter

  • 2 cups arugula, finely chopped

  •  1 whole roasted garlic head


To roast garlic, cut top off of garlic bulb and drizzle with extra-virgin olive oil. Wrap in foil and bake at 400°F for 20 minutes. Set aside. 

In pot of cold water, place potatoes and bring to boil. Reduce heat and simmer. Cook about 30 minutes or until just tender. Remove from heat, drain (leaving in pot) and mash with remaining ingredients. Season with salt and pepper.
