In Mexican cuisine, pico de gallo, also called salsa fresca or salsa cruda, is made from chopped tomato, onion, and cilantro. Pico de gallo can be used in much the same way as other Mexican liquid salsas, but since it contains less liquid, it can also be used as a main ingredient in dishes such as tacos and fajitas.


Ingredients

4 tomatoes, diced

1 small yellow onion, diced

1 jalapeño, miced

3 tablespoons cilantro, chopped

juice of 1 lime

coarse salt, to season


Preparation

In small bowl place all ingredients, stir to combine. Best if served the same day. Makes 2 cups.
