Kids love these fun easy to make chicken fingers, here with a nice tangy Parmesan crust.


3 boneless chicken breasts, cut into 4 strips each

1 cup all-purpose flour

1 1/2 teaspoons coarse salt

2 eggs, beaten

1 cup bread crumbs

1/2 cup good Parmesan cheese

Vegetable oil for frying

Popsicle sticks


Dredge chicken strips first in flour, then egg, then in combined cheese and bread crumbs. Set aside. Heat 1 inch cooking oil in heavy skillet to medium heat. Fry chicken 3 minutes each side and drain on paper towels. Insert popsicle sticks to serve.
