- 1 package good-quality spaghetti
- 1/2 cup lemon zest
- 1/4 cup extra-virgin olive oil
- 1 cup parsley, chopped
1/4 cup salted butter
1/2 cup Parmesan cheese, grated
- 1 cup feta cheese, crumbled
- 1/2 cup basil, chopped
Coarse salt and freshly ground pepper
In large pot of generously-salted water, cook spaghetti according to package directions, but drain just before completely cooked, reserving 1 cup pasta water.
Heat olive oil in large skillet over medium heat, add spaghetti and 1/4 cup reserved pasta water and heat quickly. Add lemon zest, parsley and butter and toss until spaghetti is well coated. Add Parmesan and feta cheese, and toss. Add basil and season with salt and pepper to serve.
