Lemon Spaghetti

  • 1 package good-quality spaghetti
  • 1/2 cup lemon zest
  • 1/4 cup extra-virgin olive oil
  • 1 cup parsley, chopped
  • 1/4 cup butter
  • 1/2 cup parmesan cheese, grated
  • 1 cup feta cheese, crumbled
  • 1/2 cup basil, chopped
  • Coarse salt and cracked black pepper


In large pot of generously-salted water, cook spaghetti according to package directions. In large bowl combine lemon zest, olive oil, parsley and butter. Place strained spaghetti into bowl and toss together. Top with parmesan, feta cheese and basil. Season with salt and pepper to serve.
