Lemon-roasted baby potatoes

What's better than potatoes? Boiled, mashed, fried and here, roasted with in lemon and chicken stock for a beautiful savoury flavour.

Ingredients

  • 2 pounds baby potatoes, washed and halved
  • 2 teaspoons coarse salt
  • 1/2 teaspoon freshly ground pepper
  • 1/4 cup extra-virgin olive oil
  • 1/4 cup good-quality chicken stock
  • 1/2 cup fresh lemon juice

Preparation

Preheat oven to 350°F. Place potatoes in medium bowl, sprinkle with salt, pepper, olive oil, chicken stock, and lemon juice. Arrange in a single layer on parchment-lined baking sheet. Place in oven and roast, covered, 10 minutes. Uncover and continue to roast 15 to 20 minutes longer, until golden and soft, turning occasionally.
