Grilled lemon pork loin gyro with yogurt sauce
1 1/2 pounds boneless pork loin, cubed
1/3 cup each extra-virgin olive oil
1/3 cup lemon juice
1⁄/4 cup red wine vinegar
2 cloves garlic, minced
2 tablespoons dried oregano
1 tablespoon chopped fresh thyme
1 teaspoon ground cumin
1 teaspoon sea salt
1 tablespoon sugar
1/4 teaspoon freshly ground pepper
1 1/2 cups Greek-style yogurt
1 tablespoon extra-virgin olive oil
2 tablespoons lemon juice
3 cloves garlic, minced
2 tablespoons chopped fresh dill
1/2 teaspoon sea salt
4 large Greek style pitas
6 cherry tomatoes, halved
Small red onion, sliced
Dried oregano, to garnish
For yogurt sauce, combine all ingredients. Cover and chill.
For pork, in glass bowl, combine all ingredients. Toss well; cover and refrigerate 24 hours.
To cook, grease grill and preheat to medium-high. Thread pork onto 4 skewers and grill, turning frequently for 10 to 12 minutes.
To serve, remove meat from skewers and place onto pitas, top with yogurt sauce, lettuce, tomatoes and red onion. Garnish with oregano.
