There's nothing like a comforting bowl of mashed potatoes with a good dose of roasted garlic. Yummy!

Garlic mashed potatoes3

Ingredients

  • 6 Yukon gold potatoes
  • 1 whole head garlic
  • 1/4 cup butter
  • 1/4 cup heavy cream
  • Coarse salt and cracked black pepper
  • Extra-virgin olive oil

Preparation

Preheat oven to 400°F. Cut top off garlic head and discard. Drizzle olive oil onto garlic head and wrap with foil. Bake about 30 minutes.

Boil potatoes in large pot of salted water for 15 to 20 minutes, until tender. Drain potatoes, squeeze in baked garlic and mash. Add butter, cream and salt and pepper and mash well.
