6 large Yukon Gold potatoes, peeled and cubed
- 1/4 cup canola oil
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 red bell pepper, chopped
- Coarse salt and freshly ground black pepper,to taste
- Tabasco, to taste
8 fried eggs
Cook potatoes in large pot of boiling, salted water for 8 minutes until just tender. Drain.
Meanwhile, heat oil in large skillet over medium-high heat. Add onion and garlic
and cook for about 5 minutes, until softened. Add red peppers and cook for 3 minutes.
Add potatoes and cook until golden and crusty, adding more oil if necessary. Season with salt, pepper and Tabasco. Transfer mixture to platter and top with fried eggs.
