Chunky guacamole with onion and cilantro

We once had a summer student staying with us; she was from Mexico City and she taught me that salt is the game changer in an authentic Mexican Guacamole. Here, we stated 1/4 teaspoon, but feel free to add a little extra, mixed with the lime juice, it really takes the flavour to another level.

Ingredients

  • 3 large ripe avocados, halved and pitted
  • 1/4 cup fresh lime juice
  • 1/2 cup finely chopped white onion
  • 1/4 teaspoon salt
  • 1/8 teaspoon freshly ground pepper
  • 1/4 cup cilantro, chopped
  • Tortilla chips, to serve

Preparation

In small bowl combine avocado, lime juice, and onion. Mash with fork until avocado
is still chunky. Sprinkle with salt, pepper and cilantro. Serve with tortilla chips.
