- 3 boneless chicken breasts
- 1 cup all-purpose flour
- 1 teaspoon kosher salt
- 2 eggs
- 1 cup breadcrumbs
- 1/2 cup freshly grated Parmesan cheese
- 4 tablespoons extra-virgin olive oil
- 1/2 cup Parmesan cheese, freshly grated

Place chicken breasts flat on cutting board and cut into 4 or 5 large strips across the. In 3 large dinner plates, place flour in one, eggs in another and Parmesan in the third. Dredge each strip first in flour, then in egg, then in Parmesan. Place on parchment-lined baking sheet. Heat olive oil in heavy skillet over medium heat and fry each strip until golden about 2 minutes per side. Remove chicken and drain on paper towels; set aside.
To serve, insert a popsicle stick into each chicken strip and serve with ketchup and mayonnaise.
