Chicken fingers on a stick

I love how beautiful this image is. I made these lovely chicken fingers for my daughter's birthday when she was young and we published them in ANNA Magazine. One day we were asked to appear on a national morning show in Canada and I cooked them at home, flew 2 hours and styled them on this plate. They looked perfect–And I had a 6 year old in tow!

  • 3 boneless chicken breasts
  • 1 cup all-purpose flour
  • 1 teaspoon kosher salt
  • 2 eggs
  • 1 cup breadcrumbs
  • 1/2 cup freshly grated Parmesan cheese
  • 4 tablespoons extra-virgin olive oil
  • 1/2 cup Parmesan cheese, freshly grated
  • Popsicle sticks


Place chicken breasts flat on cutting board and cut into 4 or 5 large strips across the. In 3 large dinner plates, place flour in one, eggs in another and Parmesan in the third. Dredge each strip first in flour, then in egg, then in Parmesan. Place on parchment-lined baking sheet. Heat olive oil in heavy skillet over medium heat and fry each strip until golden about 2 minutes per side. Remove chicken and drain on paper towels; set aside.

To serve, insert a popsicle stick into each chicken strip and serve with ketchup and mayonnaise.
