1 1/2 cups buttermilk
1/2 cup sugar
Zest and juice of 1 lemon
1/2 pound cherries, pits and stems removed
In mixing bowl combine buttermilk, sugar lemon zest and juice. Whisk to dissolve sugar. In food processor, fitted with steel blade, process cherries with half of the buttermilk mixture.
Using popsicle moulds, pour layer of buttermilk mixture, then freeze. When semi-frozen, insert popsicle sticks. Now pour layer of cherry-buttermilk mixture, freeze again. Alternate the two mixtures, freezing between layers.
Makes 6-8 popsicles.
