- Serves 4 to 6Servings
- 1 (2-3 pound) centre-cut piece salmon
- Coarse salt and freshly ground pepper, to season
1/4 cup packed brown sugar
1/4 cup fresh lemon juice
1/4 cup extra virgin olive oil
Preheat oven to 350°F. Place salmon, skin side down on parchment-lined baking sheet. Season with salt and pepper. In small bowl, combine brown sugar, lemon juice and olive oil. Brush mixture over fish. Bake in oven for 20 to 25 minutes or until fish flakes when tested with fork.
