Beets with cumin and lemon

Ingredients

  • 2 large beets
  • Juice of 1 lemon
  • 1 tablespoon extra-virgin olive oil
  • 1/2 teaspoon cumin
  • 1/2 teaspoon coarse salt

Preparation

Preheat oven to 350 ̊F. Wrap whole beets in aluminum foil and roast for 1 1/2 hours, or until easily pierced with knife. Cool, peel, cut into wedges and toss with remaining ingredients.
