Balsamic vinegar, feta and spinach update chicken salad, for a twist on a lunchbox staple.

- 2 chicken breasts, cooked and diced
- 1/4 cup mayonnaise
- 2 tablespoons balsamic vinegar
- 1/4 cup crumbled feta cheese
- Freshly ground pepper, to taste
- 1 cup baby spinach leaves
- 6 slices tomato
In medium bowl combine chicken, mayonnaise, balsamic vinegar, feta and pepper. Mix well. Serve with spinach and tomato in mini pita or on your favourite bread.
