With a farmhouse feel and a few modern dishes we created an Easter feast that is simple and special... With roasted beets and a leg of lamb...One that will certainly be, long remembered.

It was Easter time and my friend's parents (who had just immigrated from Italy) bought a leg of lamb for their first Easter tradition in Canada. Their father went on a hunt for red wine and found a large jug of red in a grocery store. But when he returned home to share it with his family... they took a sip, and realized it was grape juice!

Whenever Easter rolls around, I always think of this story. Although kind of heartbreaking, also beautiful.

Here, we created an Easter tradition of our own. One that is so simple to make you'll have ample time to spend quality time with family and friends.

Leg of lamb with mint sauce, lemon roasted potatoes and beets with fresh thyme, a cucumber feta salad and a very special lemon pie made with a unique French pastry and a rich lemon curd.
